The six farmhouse cheeses: Timberdoodle is an award winning Havarti-style cheese made at Woodcock Farm in Vermont. It is creamy and earthy, with a slightly tangy finish, washed in a brine producing a golden-red rind with a light dusting of natural white mold. Marieke Gouda is an aged gouda from Wisconsin. Caramel-sweet flavor and a dense, buttery texture with a pleasant, grassy aroma. Made from raw cows' milk and aged on Dutch pine planks for 6 to 9 months.
